Pork chunks marinated and slow-braised in a deep, smoky red chile sauce until tender — a New Mexico classic.

Pork shoulder bathed overnight in a rich red chile marinade, then braised until it falls apart — pure New Mexico comfort.

Step by stepInstructions

  1. Soak the chiles in hot water 30 minutes until soft.
  2. Blend the chiles with 2 cups of the soaking water, garlic, oregano, cumin, salt, and vinegar until smooth.
  3. Toss the pork with the chile sauce in a bowl, cover, and marinate overnight in the fridge.
  4. Preheat the oven to 325°F. Heat the oil in a Dutch oven and cook the onion until soft.
  5. Add the pork and all the marinade, cover, and braise 2 1/2 hours, until the pork is fall-apart tender. Serve with rice, beans, or warm tortillas.
