  1. In a bowl, toss the fish with the turmeric, fish sauce, sugar, garlic, shallots, and black pepper. Marinate for 20 minutes.
  2. Cook the vermicelli according to the package, drain, and divide among four bowls.
  3. Heat a large skillet over medium-high heat with a little oil and cook the fish until golden and crisp-edged, about 3 to 4 minutes per side.
  4. Add the scallions and half the dill to the pan and toss for 1 minute, just until fragrant.
  5. Pile the fish, scallions, and dill over the noodles.
  6. Top with the remaining fresh dill and crushed peanuts.
  7. Serve immediately with nuoc cham and lime wedges on the side.

💡 Chef tips & storage

Use a firm white fish like monkfish, cod, or catfish so the chunks hold their shape. Add the dill at the very end and toss just until it wilts — it should stay bright green.
