Cheese enchilada casserole layered with tortillas, cheese and red enchilada sauce

Cheese enchilada casserole is Tex-Mex comfort at its simplest — corn tortillas layered with cheese and red chile gravy, baked until the whole dish is gooey and bubbling. It’s the enchilada fix without the rolling.

Chef Emily presents Cheese Enchilada Casserole

Enchiladas without the rolling

Layers of corn tortillas, cheese, and red chile gravy, baked until bubbling — the Tex-Mex casserole classic.

Step by stepInstructions

  1. Heat the oven to 350°F (175°C).
  2. Spread a little gravy in the bottom of a 9x13-inch dish. Layer tortillas, cheese, onion, and gravy, repeating until everything is used, ending with cheese.
  3. Cover with foil and bake 25 minutes. Remove the foil and bake 5 minutes more until bubbly.
  4. Rest 10 minutes, then serve with sour cream and jalapeños.

💡 Chef tips & storage

Cut the tortillas into quarters so they layer easily. Let the casserole rest 10 minutes before serving so it sets.
