Beef stroganoff originated in 19th-century Russia, named after the wealthy Stroganov family, and traditionally featured sautéed beef in a mustard and sour cream sauce. The dish crossed into American kitchens throughout the 20th century, especially popular in the 1950s and 1960s as an easy, creamy weeknight dinner served over egg noodles.

  1. Cook the egg noodles according to package instructions.
  2. Melt butter in a skillet and sear the beef strips over high heat, then remove and set aside.

  5. Whisk in the beef broth and mustard, and simmer until thickened.
  6. Stir in the sour cream and beef, warming through, and serve over the noodles.
