West Coast cooks adopted the technique with their own prized catch — Dungeness crab — and the result is a soup that tastes like the essence of the Pacific distilled into cream.

What makes it great is the depth: the shells are roasted and simmered to extract every drop of sweet, briny flavour, then finished with cream and a splash of sherry that lifts the whole thing. It’s silky, luxurious, and surprisingly straightforward at home. Ladled into warm bowls and garnished with fresh crab meat, it’s the dinner-party starter that always earns the oohs.

Step by stepInstructions

  1. Melt the butter in a large pot and cook the onion, carrot, and celery for 5 minutes until softened.
  2. Add the crab shells and tomato paste and stir for 3 minutes, crushing the shells slightly to release their flavour.
  3. Pour in the brandy and let it bubble for a minute, then add the stock, bay leaf, and cayenne.
  4. Simmer gently for 30 minutes, then strain the broth through a fine sieve, pressing on the shells to extract every drop.
  5. Return the broth to the pot, stir in the cream, and simmer for 5 minutes until slightly thickened.
  6. Season with salt and pepper, fold in the picked crab meat, add a splash of sherry, and serve hot.

The shells are the flavour engine — don't skimp on roasting or simmering them. If you have time, blend a little of the strained broth with the reserved crab meat for an extra-smooth, crab-forward bisque.
