The Land of Enchantment burger

New Mexico’s answer to the burger: roasted green chiles and melted cheese over a griddled patty, on a toasted bun.

Step by stepInstructions

  1. Divide the beef into 4 patties and season with salt, pepper, and garlic powder.
  2. Heat a cast-iron skillet or griddle over medium-high heat.
  3. Cook the patties 3-4 minutes per side, topping each with cheese and a generous pile of green chiles in the last minute so both melt together.
  4. Toast the buns in the drippings.
  5. Build the burgers and serve immediately.

💡 Chef tips & storage

Hatch chiles are the gold standard — in season, roast and freeze them for year-round burgers. Let the chiles warm with the cheese for the full effect.
