Half Runner Green Beans

Tender half runner beans simmered slowly with bacon and onion until deeply flavorful.

Slow-simmered mountain beans

Half runners are the mountain bean — simmered long with bacon until soft, silky, and full of smoky flavor.

Step by stepInstructions

  1. Cook the bacon in a large pot until crisp; remove, leaving the fat.
  2. Cook the onion in the fat until soft, about 3 minutes.
  3. Add the beans, broth, salt, and pepper; bring to a boil.
  4. Reduce to a simmer, cover, and cook 45-60 minutes until the beans are very tender.
  5. Swirl in the butter, top with the bacon, and serve with cornbread.

💡 Chef tips & storage

Mountain beans are meant to be cooked long and soft — don't stop at crisp-tender. The pot liquor is the best part; sop it up with cornbread.
