Loco moco was invented in 1949 at a Hilo diner by a group of hungry teenagers who wanted ‘something different’ — and asked for rice, a hamburger patty and gravy with an egg on top. It spread across Hawaii and became the islands’ unofficial comfort dish.
The genius is the architecture: the egg’s yolk melts into the gravy, which soaks into the rice, binding everything into one glorious, savoury bite. Serve it for breakfast, lunch or a late-night craving.
