A traditional Jamaican dish — Beef Patties are the island’s favorite snack: golden pastry turnovers with a flaky, turmeric-tinted crust and a spicy ground beef heart. They evolved from the Cornish pasty brought by British colonists, seasoned with the heat and herbs of Jamaica until they became their own legend. Eaten for breakfast, lunch or late-night cravings, often tucked inside a warm coco bread.

Step by stepInstructions

  1. Make the pastry: whisk the flour, turmeric and salt together, rub in the cold butter until the mixture looks like coarse meal, then stir in just enough ice water to form a firm dough; wrap and chill for 30 minutes.
  2. Make the filling: brown the ground beef in a skillet, then add the onion, garlic, scallions, thyme, scotch bonnet and curry powder, and cook for 3 minutes.
  3. Pour in the beef stock, stir in the breadcrumbs and simmer until thick and nearly dry; season with salt and set aside to cool completely.
  4. Heat the oven to 400°F (200°C). Roll the dough out thinly on a floured surface and cut into 6-inch (15 cm) rounds.
  5. Spoon 2 to 3 tablespoons of filling onto one half of each round, fold the other half over and crimp the edges with a fork to seal.
  6. Brush the patties with a little beaten egg or milk, prick the tops with a fork, and bake for 25 to 30 minutes, until golden and crisp.

Keep the pastry cold and handle it as little as possible for a flaky crust. Unbaked patties freeze beautifully — bake straight from frozen, adding a few minutes, a classic trick in busy Jamaican households.
