Juk — creamy rice porridge with chicken and vegetables

Juk, Korean rice porridge, is the food Koreans give the sick, the elderly, and the very young: a bowl of rice simmered slowly until it turns silky and soothing. It has been eaten for centuries as gentle nourishment, and every family has a favorite version, from plain white porridge to this chicken-and-vegetable bowl. It is the taste of being taken care of, whether it is breakfast on a cold morning or a quiet dinner when you need something soft.

Silky, warm, and quietly healing

The porridge is thick and creamy, with soft rice grains suspended in a comforting broth and bits of chicken and vegetables throughout. A swirl of sesame oil and a sprinkle of sesame seeds finish it, and a little soy sauce wakes it up. Stir it often so it stays smooth, and adjust the thickness with more stock to your liking. It is simple, nourishing food that makes everything feel a little better, and it comes together in less than an hour.

Step by stepInstructions

  1. Soak the rice in cold water for 30 minutes, then drain.
  2. Heat the sesame oil in a pot and cook the garlic and ginger for 1 minute until fragrant.
  3. Add the rice and stir to coat for 1 minute.
  4. Pour in the water or stock and bring to a boil, then lower to a gentle simmer.
  5. Cook for 20 minutes, stirring every few minutes, until the rice is very soft and the porridge thickens.
  6. Add the chicken, carrot, zucchini, and mushrooms and simmer 12 minutes more, stirring often.
  7. Season with the soy sauce and salt, top with the scallions and sesame seeds, and serve hot.

💡 Chef tips & storage

Soak the rice in cold water for 30 minutes before cooking so it softens faster and turns silkier. Stir often, especially toward the end, so the porridge does not catch on the bottom.
