Molasses arrived in Newfoundland by the barrel, shipped north from the Caribbean in the same holds that carried salt fish south, and it was cheaper than sugar — which made it the sweetener of choice in every outport kitchen. Bakers stirred it into bread dough, and the result was a dark, fragrant loaf with a sweetness that no white bread could match. Baked on the wood stove’s bottom heat and finished in the oven, a molasses loaf was a weekly fixture in the bread box.

What makes it great is that deep, bittersweet molasses flavour, with its hints of caramel and smoke, in a sturdy loaf that slices thick and toasts beautifully. It’s denser than sandwich bread, with a tender crumb that loves butter and jam, and it keeps for days without going stale. Spread it with butter while it’s still warm, or toast it the next morning — either way, it’s the taste of a Newfoundland kitchen.

Step by stepInstructions

  1. Dissolve the yeast in 1/2 cup of the warm water with a pinch of sugar and let it stand for 10 minutes until frothy.
  2. Mix the flours and salt in a large bowl, then stir in the molasses, remaining water, melted butter and the yeast mixture.
  3. Stir until a shaggy dough forms, then turn it out and knead for 8 to 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover and let it rise in a warm spot for 1 hour until doubled.
  5. Punch down the dough, shape it into a loaf and place it in a greased 9 by 5 inch loaf pan.
  6. Cover and let rise again for 45 minutes, then bake at 350°F for 40 to 45 minutes until deep brown and hollow-sounding when tapped.
  7. Brush the top with a little molasses while still warm for a glossy, sweet crust.
  8. Cool in the pan for 10 minutes, then turn out onto a rack to finish cooling.

Don't be shy with the molasses — this bread should taste distinctly of it. Slice it thick, and store it in a cloth bag rather than plastic so the crust stays crisp.
