Samoan Oka

Oka is Samoa’s proud contribution to the Pacific’s raw-fish family. Fresh tuna is cut into chunks, ‘cooked’ in lemon or lime juice, then tossed with coconut cream, tomato, cucumber and chilli — a dish that celebrates the sea and the coconut palm in every spoonful.

Where Fijian kokoda leans citrusy, Samoan oka is all about rich, unctuous coconut against clean, sweet fish. Serve it as a starter or light lunch with fresh lime and toasted bread.

Step by stepInstructions

  1. Toss the tuna cubes with the lime juice in a glass bowl; cover and refrigerate for 15-30 minutes, stirring once.
  2. Drain off the lime juice, reserving a splash if you like it tangier.
  3. Gently fold in the coconut cream, tomato, onion, cucumber, chilli and salt.
  4. Chill for 15 minutes, taste and adjust the seasoning, then serve cold with lime wedges.

💡 Chef tips & storage

Samoan oka is best eaten within a few hours of making. Keep the marinating time short for tuna so it stays silky rather than firm and chewy.
