Red curry is the workhorse of Thai home cooking, and the color comes from dried red chilies pounded into the paste along with lemongrass, galangal, and shallots. It is spicier than green curry but still rounded out by coconut milk, making it the curry many people fall in love with first. Thai families make it with whatever protein is on hand — chicken, pork, or shrimp — and a good paste makes it a weeknight classic.

Rich, red, and warmly spicy

The sauce is thick and glossy, coating tender chicken and crisp bamboo shoots in a layer of warm, fruity heat. Kaffir lime leaves and Thai basil brighten every spoonful, while a little palm sugar keeps the chilies in check. It is the kind of curry that fills the house with an incredible aroma long before dinner is ready, so serve it with plenty of jasmine rice to catch every drop of the sauce.

Step by stepInstructions

  1. Spoon the thick cream from the top of one can of coconut milk into a wok with the oil and heat until it sizzles.
  2. Add the red curry paste and fry for 2 to 3 minutes, until it smells fragrant and the oil separates.
  3. Add the chicken and toss to coat, cooking for 3 minutes until no longer pink.
  4. Pour in the remaining coconut milk and 1 cup of water. Add the bamboo shoots, eggplant if using, and kaffir lime leaves and bring to a simmer.
  5. Cook for 15 minutes, until the chicken is tender, then add the bell pepper and cook 3 minutes more.
  6. Season with fish sauce and palm sugar, stir in the Thai basil, and serve hot with jasmine rice.

💡 Chef tips & storage

Fry the curry paste in the thick coconut cream first — it releases the oils and deepens the flavor. If red curry paste is too fiery, stir in an extra spoonful of coconut milk at the end.
