Reviro is the breakfast of rural Paraguay: a simple dough of flour, pork fat, and salt, cooked in a pan and broken into craggy golden pieces as it fries. It’s eaten with sweet cocido or coffee, sometimes with eggs scrambled right in, and it’s the most honest, satisfying start to a day you can imagine.

The reviro comes out golden and crisp-edged on the outside with a soft, tender middle, its irregular craggy pieces made for dunking. It’s not fancy — it’s better than fancy: warm, salty, and ridiculously comforting.
