Sataraš is a rustic summer stew of sweet peppers, ripe tomatoes, and onions, softened in oil until jammy and fragrant. Some versions stir in a few eggs for a heartier supper.

Simple and endlessly versatile, sataraš is served warm with crusty bread or spooned over grilled meat across the Balkans. It is at its very best when the vegetables are at their ripest.

Step by stepInstructions

  1. Warm the oil in a wide skillet over medium heat; add the onions and cook 8 minutes, until soft.
  2. Add the peppers and garlic; cook 10 minutes more, stirring.
  3. Stir in the tomatoes, salt, pepper, and paprika; simmer 15-20 minutes until jammy and thickened.
  4. If using eggs, make wells in the mixture, drop the eggs in, cover, and cook 3-4 minutes until just set.
  5. Finish with parsley and serve warm with crusty bread.

💡 Chef tips & storage

Cook the vegetables slowly so they melt into each other — high heat makes them watery. Add the eggs only at the very end if using them.
