A perfectly fried Schnitzel is a thing of beauty: a thin cutlet in a craggy, golden breadcrumb crust that shatters at the touch of a fork. The meat stays juicy and tender beneath, seasoned simply with salt, lemon and maybe a whisper of parsley.

Whether veal or pork, it’s the most famous dish in the German-speaking kitchen, served with potato salad, fries or a wedge of lemon. Eat it hot, straight from the pan.

Step by stepInstructions

  1. Pound the cutlets between plastic wrap to an even 1/8–1/4 inch thickness.
  2. Set up three shallow dishes: flour, beaten eggs, and breadcrumbs seasoned with salt and pepper.
  3. Dredge each cutlet in flour, shake off excess, dip in egg, then press into breadcrumbs until evenly coated.
  4. Heat the oil in a large skillet to 350°F (175°C).
  5. Fry the cutlets one or two at a time, 2–3 minutes per side, until deep golden and crisp.
  6. Drain on paper towels and season immediately with a pinch of salt.
  7. Serve hot with lemon wedges and parsley.

💡 Chef tips & storage

Press the breadcrumbs on firmly but don't pat the cutlet after breading — it traps the crust. Serve immediately; a schnitzel waits for no one.
