Soul food fried corn with bacon

Fresh corn kernels pan-fried in butter and bacon fat with a touch of sugar and cream.

Corn off the cob, amped up

Fresh corn fried in bacon fat and butter until golden, then finished with a little sugar and cream — summer, perfected.

Step by stepInstructions

  1. Cook the bacon in a large skillet until crisp; remove, leaving the fat.
  2. Add the corn, butter, sugar, salt, pepper, and paprika; cook 10 minutes, stirring, until the corn is golden and tender.
  3. Stir in the cream and simmer 3 minutes until slightly thickened.
  4. Top with the bacon and chives and serve hot.

💡 Chef tips & storage

Scrape the cobs after cutting to capture the milky liquid. The sugar caramelizes the kernels — don't rush the browning.
