Step by stepInstructions

  1. Heat the oven to 350°F (175°C).
  2. Cook the squash and onion in the butter over medium heat for 10 minutes until tender. Drain well.
  3. Stir in the sour cream, cheddar, and soup. Season with salt and pepper and transfer to a baking dish.
  4. Mix the crushed crackers with the Parmesan and sprinkle over the top.
  5. Bake 30 minutes until hot and golden. Let rest 10 minutes before serving.

Salt the cooked squash and let it drain so the casserole isn't watery. Use buttery round crackers crushed coarse for the best crunchy topping.
