Sour cream chicken enchiladas in a creamy white sauce with melted cheese

Sour cream chicken enchiladas are the creamy white-sauce counterpart to red enchiladas — chicken and cheese rolled in corn tortillas, baked under a velvety sour cream sauce with green chiles. They’re the comfort-food favorite of Tex-Mex restaurants everywhere.

Chef Emily presents Sour Cream Chicken Enchiladas

The creamy white-sauce classic

Chicken enchiladas baked under a velvety sour cream and green chile sauce — the Tex-Mex comfort favorite.

Step by stepInstructions

  1. Heat the oven to 350°F (175°C).
  2. Melt the butter in a saucepan and cook the onion until soft, 4 minutes. Whisk in the flour and cook 1 minute, then slowly add the stock and simmer until thick.
  3. Off the heat, stir in the sour cream, green chiles, cumin, garlic powder, salt, and pepper.
  4. Soften the tortillas in a little warm oil. Fill each with chicken and cheese, roll, and place seam-side down in a baking dish.
  5. Pour the sauce over the top, sprinkle with remaining cheese, and bake 30 minutes until bubbling.

💡 Chef tips & storage

Don't boil the sauce after adding the sour cream — gentle heat keeps it smooth. Use rotisserie chicken to save time.
