Stamppot

Stamppot is the Dutch mash-and-veg supper in its purest form: floury potatoes boiled with a vegetable — kale, endive, carrot, or sauerkraut — then mashed together with butter, milk, and a good pinch of nutmeg.

It is humble, filling cooking built for cold evenings, finished with smoked sausage and gravy. Once you learn the rhythm, every vegetable in the fridge becomes a potential stamppot.

Step by stepInstructions

  1. Cook the potatoes and vegetable together in a large pot of salted water until the potatoes are fork-tender (leafy greens need only 5 minutes at the end).
  2. Drain well and return to the pot over low heat for a minute to steam dry.
  3. Add the hot milk, butter, salt, nutmeg, and pepper, and mash to your preferred texture.
  4. Warm the rookworst in simmering water for 10 minutes.
  5. Serve the stamppot with sliced sausage and gravy on top.

💡 Chef tips & storage

Swap the vegetable freely — kale, endive, carrot, and sauerkraut are all classics. For extra flavor, fry diced bacon first and mash the potatoes in the drippings.
