Tahitian Chicken in Coconut Cream

Chicken, called moa in Tahitian, has been part of island life since the earliest Polynesian voyagers carried it across the Pacific in their canoes. When European contact brought new cooking styles, Tahitian cooks simply did what they do best — took the humble bird and bathed it in coconut cream, the ingredient that anchors nearly every island sauce.

What makes it great is how the coconut cream reduces around the browning chicken into a rich, gently sweet gravy that clings to every piece. The lime cuts the richness, the ginger adds warmth, and the result is a deeply comforting one-pot dinner that tastes of the islands no matter where you cook it.

Step by stepInstructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the oil in a large pot over medium-high heat and brown the chicken in batches, 4 to 5 minutes per side. Set aside.
  3. In the same pot, sauté the onion, garlic, and ginger until soft and fragrant, about 3 minutes.
  4. Return the chicken to the pot, add the coconut cream and stock if using, and bring to a gentle simmer.
  5. Cover and cook for 25 to 30 minutes, until the chicken is tender and cooked through.
  6. Stir in the lime juice and simmer uncovered for 5 minutes more, until the sauce thickens slightly.
  7. Garnish with green onions and serve with rice and lime wedges.

💡 Chef tips & storage

Bone-in chicken makes the sauce noticeably richer; for a faster weeknight version use boneless thighs and shave 10 minutes off the simmer. Taste before salting — coconut creams vary a lot in saltiness.
