Zharkoye

Zharkoye is a Russian pot roast in the truest sense — chunks of beef and root vegetables braised together in one pot until they collapse into a rich, glossy gravy. It is the meal that fills a cold house with warmth.

Served straight from the pot with dark bread for soaking up the juices, zharkoye is old-fashioned food that asks for nothing but time. The vegetables go in large, rustic pieces and come out meltingly tender.

Step by stepInstructions

  1. Brown the beef well in the oil in a Dutch oven; transfer to a plate.
  2. Sauté the onions until golden, add the tomato paste, and cook for 1 minute.
  3. Return the beef with the garlic, bay leaves, peppercorns, salt, and broth; cover and braise at a gentle simmer for 1 hour.
  4. Add the potatoes and carrots, cover, and cook for 45 minutes more until everything is fork-tender.
  5. Rest for 15 minutes, season to taste, and serve garnished with dill.
